This blossoms into doenjang and ganjang, like twins, before being separated. Doenjang then continues aging in the onggi for a minimum of two years.\u003cspan style=\"font-size: 0.875rem;\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eJang making traditionally begins between winter and early spring, often timed to the first lunar month.
