We were honoured to be invited by Le Cordon Bleu to be part of their wonderful summer festival.
Recognition from people whose values align closely, for food that is made properly, for real flavour, respect to the process and art of food.
And to have so many fantastic chefs really love the taste of Korea's heritage left me with a very warm feeling.
And that they could straight away tell the difference with the industrially made products.
Not only did they appreciate the depth of flavours, but also that they appreciated and had an interest in the story of the artisans in Korea, the history they preserve, and the craft itself too.
And meeting chefs who already had an interest in Korean cuisine, one who had even been to Korea to learn 사찰음식 sachal eumsik, temple food!
He was kind enough to share with me a 30-year-old ganjang.
What an experience.
The visitors too of course, who also had a love of great food, with fantastic palates themselves, appreciation for food made using ingredients that respect how food should be.
It was a great day, really enjoyable to be around other like-minded people.
And on top of all that, I got to wear a toque blanche!
I am grateful to the incredible people at Le Cordon Bleu who were very kind in inviting Jungdam to take part, and were so helpful in the whole organisation.
